Harmony among sake makers, sellers and users produces good sake, and good sake creates harmony among people.
We are pursuing harmony between two different qualities brewed for thick taste with traditional yeast starter and for light taste from highly polished rice fermented at a low temperature and a low speed.

Our sake breweries located near Shiga prefecture’s border with Mie, is in Koka city known as home of Koka Ninja.
Back in about 1763, our ancestor was making sake with brand name of “Hoichi”. Since the quality was not as good as he expected, he went to Yamamura shrine for divine oracles.
He dug a well according to them, and a good quality of water, which was hardly found in and around the area, started to well up.
Combined with a good quality of Ohmi rice, the sake brewed with such water was so good that he changed the brand name of sake from “Hoichi” to “Shinkai”,
which means sake made according to the oracles of God.
